Mediterranean Beef Bowls

I am a bowl kind-of girl! And as summer approaches, these Mediterranean bowls are a fresh, easy way to serve up a protein-packed dinner. With seasoned beef, veggies, chickpeas, and herbs, this is one of those meals that’s as easy to throw together and I promise you’re going to crave it the next day.

Ingredients

For the Beef (4 lbs):

  • 4 lbs ground beef

  • 1 tbsp olive oil

  • 6 cloves garlic, minced

  • 2+ tsp dried oregano

  • Salt & pepper to taste

  • Juice of 1 lemon

For the Bowl Base:

  • 2 English cucumbers, chopped

  • 2 cups cherry tomatoes, halved

  • 1 small red onion, diced

  • 2 (15 oz) cans chickpeas, drained and rinsed

  • 3 tbsp olive oil

  • Juice of 1 lemon

  • Optional: cooked rice or quinoa (about 4 cups cooked)

Toppings:

  • 1 cup crumbled feta cheese

  • ½ cup fresh parsley, chopped

  • Extra lemon wedges for serving

  • Greek yogurt (about 1–2 cups for generous scoops)

Instructions

1. Cook the Beef

In a large skillet over medium heat, warm the olive oil. Add minced garlic and sauté for about 1 minute until fragrant. Add ground beef, oregano, salt, and pepper. Cook until browned and fully cooked, breaking up the meat as it cooks. Squeeze lemon juice over the beef just before removing from heat.

Layer the veggies & chickpea mixture into bowls. Add a generous scoop of the seasoned beef.

Optional: Start with a base of rice or quinoa if you’d like something more filling.

Top each bowl with crumbled feta, a handful of fresh parsley, an extra squeeze of lemon juice, and a big scoop of Greek yogurt for creaminess and that classic Mediterranean flair.
