The Fluffiest Pancake Recipe

We are a family of pancake connoisseurs—we’ve tried them all, from classic buttermilk to gourmet variations. But this recipe? It’s the ultimate. Light, fluffy, and absolutely delicious, these pancakes are everything a perfect pancake should be. Whether it’s a lazy Sunday morning or a weekday breakfast treat, this foolproof recipe will have everyone coming back for more!

Ingredients:

2 cups all-purpose flour
1 cup whole wheat white flour*
1.5 Tbsp sugar
1 tsp salt
5 tsp baking powder
5 Tbsp butter, melted
2 eggs, room temperature
4 tsp vanilla
1 handful chocolate chips, optional

Directions:

Add flour, baking powder, salt, and sugar in a large bowl and mix well. Create a well in the center and add milk, eggs, melted butter, and vanilla extract. Gently mix, starting from the center and working outward, until the batter is mostly smooth. Do not overmix!

Heat a non-stick griddle or pan over medium-high heat (300-350°F for an electric griddle which is what I use) and lightly grease it with butter. Pour ½ cup of batter onto the hot surface and cook until bubbles form and the edges look set—about 2 minutes. Flip and cook for another minute without pressing down to keep them fluffy. Transfer to a plate and repeat with the remaining batter.

*You can use all-purpose flour for all 3 cups. I add a cup of whole wheat to make it a bit more healthy-ish.
